Calling on you for help -

I need a suggestion of what Side Dish I could take to Chez Inlaw for Easter Brunch.

Needs to serve 8-10.

Prefer a recipe with a high cholesterol content and idiot-level simplicity.

MIL's serving ham. ..


ETA: and, just talked to R - MIL's also serving her famous potato salad, so potatoes are out.

Dammit, those potato recipes sounded awesome. :(

One of those "cheesy potato" things. You know, frozen shredded hash browns mixed with cheese, and I dunno, must be a can o some sort of cream soup, no? Surely you can always add more butter, and lots more cheese on top. Generally has 'cruncy bits' on top, maybe Corn Flakes? But you could subtitute any fattening item you desire...maybe bread crumbs that you 'toast' in a saucepan with butter? lemme go search around and come back

I'm a big fan of the simple green bean casserole. But then my sister always gives that one to someone else and asks us to bring the wine. It’s great to be known as the one in the family that be counted on to bring booze.

Scalloped potatoes? What about asparagus with Hollandaise sauce, if you're allowed to use her microwave to reheat at the last moment? Or a corn casserole? Sweet potato casserole with marshmallows on top? Some kind of salad with fruit and candied nuts? I have a nice recipe for one with romaine lettuce, candied pecans and strawberries with a light dressing.

Boil a whole cauliflower (minus the green bits, duh) in salty water. When it is almost all the way done, coat the whole thing in a mixture of mayonaise and dijon mustard. (I do this by appearance without measuring-- probably like 1/4 c of mayo with 3 tbsp mustard? It should be light yellow!) Sprinkle cheddar cheese all over that thing. You can be fancy and add a little paprika to the top for color, if you want. Put it in the oven at 400 for 20-30 minutes or until the cheese is bubbly and slightly brown.

This is so simple, and so good. Plus, everyone thinks that it was really hard to make. Plus, it tastes good with ham.

Scalloped Corn

1 can creamed corn
1 can whole kernal corn, undrained
2 eggs
1 stick butter
8 oz sour cream with chives
4 T. chopped onion
1 box Jiffy corn muffin mix

Mix all ingredients together in a greased casserole. Bake at 350 degrees for 45-60 minutes until it doesn't "jiggle". You might want to stir it once or twice so the edges don't get too done.

green bean casserole. Made with cream of mushroom soup, whole milk, and lots of french fried onions.

Green pea salad. You don't have to cook anything. Open a few cans of baby green peas, add some mayo, shredded cheese, pimentos, and diced water chestnuts and onions. Stir it up good, salt and pepper it. Taste it to see if you want anything else in it. Put it in the refrigerator- It's best after the tastes have had time to mix.

crap...i don't know if my last comment posted...but a grape salad is so sweet and wonderful and delicious! everyone loves this whenever i make it (i do go with fat free sour cream and low fat cream cheese but it's because my ass insists) but this is the recipe i use:

One year, we brought pizza.

We were told to bring something that we were sure to eat - my mother-in-law can make some funky things. My girls & I can't stand ham, but love pizza.

So there you have it.

By the way, we were never asked to bring anything ever again. I guess we solved this "bring something to share" problem forever :)

how about homemade dressing? much better than stuffing and goes great with ham,

1 pan of cornbread
6-12 eggs
1can beef broth
1 can chicken broth
1 sleeve crackers
1 can cream of mushroom
1 can of cream of celery
1 cup finely chopped onion
1 cup finely chopped celery
salt and pepper

get one of those disposable turkey pans
crumble the cornbread, then add all the soups, and broth, onions and celry mix together, then add 8 eggs mix together again, should be a good soupy mixture
finely crumble 1/2 a sleeve of cracker and mix those in
if mixture seems too soupy add more crackers, if it seems too dry add more eggs......
bake in oven at 375 for 1 hour
then turn oven up to 425 for 45 min or until a nice golden brown

this is my grannys recepe, i have been making it since i was 18, im 32 now and think i have finally mastered it, just put it all down here from memory, hope you enjoy it

Do NOT let the words Lima Beans put you off this recipe...everyone loves it! (what's not to love about a recipe with bacon AND sour cream...and it goes GREAT with ham)

1\2 lb. bacon, cut into 3/4 in. pieces
3 cans of lima beans
1\2 cup chopped green onions
3\4 cup sour cream
1\3 cup firmly packed brown sugar
1 tsp. dry mustard
smidge of garlic and cayenne to taste

Heat over to 350F. Cook bacon until crisp and drain. Combine all ingredients in a casserole dish (2-quart) and bake uncovered for 35 - 45 minutes.
